I love hotdogs. Nothing like the taste of succulent frankfurters topped with ketchup and sweet mustard. I’ve been cooking through my Gordon Ramsay’s ultimate cookery course and he introduced me, well, not personally ? to the joys of having hotdogs with caramelised onions (you can never go wrong with caramelised onions) and wonderful easy to make quick chilli con carne. Having a BBQ, picnic or potluck soon? This is the recipe to try. Your guests are sure to gobble them up. I tweaked the recipe a little bit for the sake of availability. Enjoy!
Ingredients:
4 large frankfurters
4 hotdog buns
Cheddar cheese
For the quick chilli con carne
Olive oil, for frying
1 onion
3 cloves of garlic finely diced
3 tsp Chilli powder
500g mince meat.
1 tsp dried Oregano
4 tsp tomato purée
5 fresh tomatoes chopped
Pinch of caster sugar
For the caramelised onions
2 purple onions
2 tbsp Brown sugar
2 tbsp Dark rum
Method:
1. ) To make the quick chilli con carne place a frying pan over medium heat and add about two tablespoon of oil, once hot sweat onions for 4-5mins add the garlic and fry for another 1min until soft add the curry powder cook for few minutes, add the chilli powder and mix well.
2. ) Season the mince meat, turn up the heat and add another tablespoon of oil fry the mince on high heat for about 6-8 minutes, keep stirring to break the mince up. When the mince is lightly browned, add Worcestershire sauce then turn down the heat, add tomato purée and cook for another 2 mins.
3.) Add the diced tomatoes, sugar, oregano, cover to let it simmer for about 20 mins and the quick chilli con carne is ready.
4.) Meanwhile, prepare the caramelised onions. Heat the frying pan on slow – medium heat, add a dash of oil, add the onion with a good pinch of salt and gentle sweat for 10-15 mins (please don’t turn up the heat to speed up this process it will simply burn the onions) once the onions are golden and soft add the dark rum and sugar. Allow to caramelise till onions are nice and sticky. Set aside.
5.) When ready to serve, boil or griddle the frankfurters for 6 minutes till it’s heated through, drain and cut open the buns, layer with caramelised onion, top with the sausages and a generous spoonful of the chilli con carne. You can crumble the cheese on and top with chopped spring onions.
I have a small confession, I got myself to such a tinker preparing for my homemade pasta I forgot to add the cheese, my family were tucking in when I remembered.
