Melon Mint Soup

This Mint Melon Soup with Collagen Boost is a life-saver when it’s swelteringly hot outside and the last thing you want to do is turn on the oven.

  • 1 cup chopped honeydew
  • 1 cup chopped cucumber
  • ½ cup unsweetened coconut milk beverage
  • 1 Tbsp. fresh lime juice
  • 2 scoops Collagen Boost
  • 16 mint leaves
  1. Place honeydew, cucumber, coconut milk, lime juice, Collagen, and mint in a blender; cover. Blend until smooth. 

  2. Serve immediately, or store refrigerated in an air tight container for up to a day
